Absolutely. An iTunes Gift card can be used to buy just about anything on the iTunes Store, with the exception of gift certificates.

Note that this is different from "Song Codes" that you may also find. These are generally given out as part of a promotion (ie, the codes found under Pepsi caps, for example), and are good for one song per code (not videos, games, or anything else).

Gift cards and gift certificates however, have a dollar value, and those dollars can be spent on any type of content that is available on the iTunes Store in the country where the gift certificate or gift card was purchased.
