Anyone know how I can "Get Info" for each track/podcast/etc. on Touch like I was used to doing on my old (now defunct) 30g Photo?

don't know how it was handled on older ipods but as far as I know you cannot get information about podcasts/files on the touch :-)

There is no way to "Get Info" on the iPod touch and there never really was for the older iPods either. The only thing that you can change/view on the iPod (other than the typical track ID information) is the star rating.

To bad someone can't create a utility that'd allow you to yank all your tags and drop them into the lyrics which can be viewed on the iPod Touch...

Agbasher, it would be helpful if you could explain exactly what information you were pulling up on your old iPod photo. I know on all iPods I've had to date (3rd Gen, mini, nano, & classic), the most I've ever been able to see for an individual song is song rating, track time, chapters (if present), and lyrics (if present). Obviously, only the more recent iPods fully support all of those features.
As for podcasts... that's a different animal as it relates to the iPod touch. I have noticed that the iPod touch does not appear to support displaying podcast descriptions when a podcast is playing.
For example, on any of the iPods with specific podcast support (that'd be iPod mini and iPod models released thereafter), you could view the textual podcast description for the podcast currently being played by pressing the center Select button. So, from the Now Playing screen, it would cycle as Track Progress -> Scrubber Bar -> Star Rating -> Podcast Text Description.
Unfortunately, the iPod touch doesn't seem to have a way to view the podcast description (which is stored in the "Comment" field of the ID3 tags for the track). The iPod touch *can*, however, view text in the "Lyrics" tag if it's running the latest 1.1.3 firmware. So, if the producer of the podcast puts the description in the "Lyrics" tag for the file, then it will be viewable on the iPod touch... just tap the podcast artwork from the "Now Playing" screen, and any text stored in the "Lyrics" will display (along with the scrubber bar and shuffle/repeat settings directly above it).
Thankfully, some podcasts put their information in the Lyrics field (the Amateur Traveler Podcast immediately comes to mind). Others, such as CNet's popular Buzz Out Loud podcast only put it in the "Comment" field (which is, frankly, the standard way of doing things). It's unfortunate that the iPod touch cannot view this information when the other models in the iPod lineup are capable of doing so.
On the upside, the iPod touch is the only iPod I've encountered thus far which allows you to view the complete list of chapter markers (with chapter titles) for Enhanced AAC Podcasts. Other models only permit viewing the chapter titles by pressing the Forward/Back buttons (the other models *can* show chapter lists for Audiobooks, but not Enhanced AAC Podcasts. Very odd). You win some features, and lose others.
