So I managed to work around purchasing the app pack and now have everything from lyrics to stocks. The wiggly thing is really fun, too. :)
However in doing this I got the unfortunate mess of Phone and SMS apps - and basically it just thinks it's an iPhone.
I'm looking for work-arounds to this and if I figure it out before anyone else I'll think about releasing this as a repository thing for you all. But by the time I do it someone else probably would have beat me to it.
Ah well. :D

how did you add the lyrics and wiggly without purchasing them?
I am currently doing the 1.1.3 jailbreak right now...but I doubt that adds the lyrics and wiggly feature. Do you also have the new version of maps?
Also can you not just use a FTP program and use SSH to delete all the iphone apps?

I probably could do that and was thinking about it, but I won't be able to do it for a few hours - I will be trying, however.
The lyrics, wiggly feature and apps are all within the 1.1.3 firmware, it's just a case of unlocking them.
I'm not willing to give it away just yet as if the whole I've-tricked-my-iPod-into-thinking-it's-an-iPhone thing fails and I have to restore, I'll have lots of not-very-happy people after my heiny.

I looked at a video on youtube explaining how it was simple to unlock the files by means of renaming a few things in the iPod, however they said in the comments section that all you have to do to remove sms and phone is to delete the apps in your SSH program

Yeah, that gets rid of the Apps but it still thinks it's an iPhone and thus has iPhone preferences, constantly searches for a network and is generally not pleasant to use - not to mention that you can't edit music playback prefs because the option disappears from the settings menu once you delete the phone app.
That way is a rubbish way of doing it but it worked for the whole four days I had it done before iPodTouchMaster came up with his little way.
