How exactly do you do this?
The manual says to click the "Options" button in iTunes then check "Manually manage songs and playlists" which I did and pressed "Ok". But then it says to transfer them over from the source list. Where is this "source list"? I don't see anything different when I press "Ok".

The source list is the panel to the left (where the library is and where you can see your playlists). If you put a cd in your computer it will show up in the source list once you open iTunes.

I'm not sure there is a way to do it. If you click on the CD and drag the songs to the iPod icon, if it does anything I believe it will transfer them uncompressed. If you want to make MP3 or AAC out of them I think you have to import them into the library first.

Ok, I see it now. I didn't even see that before.
Now I'm trying to drag the songs over to the iPod but it will not let me (has the circle with a slash through it). I think it is because the "Do not disconnect." message is displaying on my iPod.
What can I do to get rid of this message? I have it set to update manually so I'm not so sure what it's doing!!
Thanks for the help.

If what you are saying is it will take up more room (uncompressed) then that is fine with me. I only have about 7-8 cd's right now that I want on it, which is why I waited for a mini version.

Just hit the import button in iTunes and import the cds (they will be compressed).
BTW: Choose your compression settings under edit-->preferences and importing. If you don't care about the files taking up a little extra capacity you could set the importing setting to 192 kbps AAC. It will sound a little better.
When you have imported your cds plug you iPod in and iTunes will automatically put all your music from your iTunes library on your iPod mini. You can set iPod options if you right click the iPod in the source list and select ipod options.

The "do not disconnect message" should always be there when you have plugged in your iPod. When iTunes (or you manually) has done the transferring of music to the iPod it will change to "ok to disconnect". If you are manually transfering songs you can right click the iPod in the source list and select disconnect iPod.
This may sound a little difficult at first if you have never ripped cds or used mp3 files before, but it's actually very simple. You can select Help-->iTunes help in the menu for more help or just ask questions on this message board. :)
If you play around a little in iTunes you'll quickly get the hang of it.

If you go to Edit>Preferences>Importing and select WAV as the import method. Once you insert your CD it should appear as a source in iTunes. Select the CD from the source menu if it doesn't appear automatically. Select import. Beware WAV files are very large. An full CD will take about 600+ MB of space on your iPod. That means your mini will only hold about 5.5 CDs.

It's best to use compressed files with the iPod. No point in only having 5 cds on a mp3 player. :)

Well, I wanted to do it directly to the iPod because this computer is running extremely low on space.
I'll just import it, put it on the iPod, then delete it off the computer.
Only if this computer were a little bigger in hard drive space!!
Thanks everyone for your help!

For various reasons, though, uncompressed files are much more prone to skip. You're much better off compressing them.
I'd recommend importing each CD, then copying manually from your library to your iPod and deleting the copy in your library. (This requires that you set the iPod up to manually manage its contents.)
You may not have much space but I have to imagine that you can spare 30 or 40 MB to hold the contents of one album... otherwise it's amazing your computer runs at all! :)

Yeah, that's about all I had to spare.
But I found where a bunch of files were that weren't needed at all and deleted a bunch of stuff. Now I have over 900 MB left. :)

One more question.
I have an input line in my car stereo. What kind of wire do I need to connect my iPod to this so I can listen to it in my truck?

Hard drives are so cheap these days, I'd recommend purchasing another internal drive (120GB or larger), or if your computer has a firewire port, pick up an external firewire hard drive.

I second Andy's suggestion for a second harddrive.
Sooner or later, you'll have a problem with your iPod where nothing but a total restore will help (it's just the nature of the beast). After a restore, you'll have to transfer everything back to your iPod, and if you don't have your music backed up on your pc, this will mean re-ripping all of your music again.

I think I'll be getting a laptop soon, so what I did was rip all my cd's onto one data cd at my dad's office and I'll just keep that for the time being.
That should do the trick for now!
Thanks everyone!!
