When I plug my iPhone into the PC, when iTunes isn't loaded, it recognizes it as a "Camera" and I can browse the photos and copy them via windows explorer.

Use either "Image Capture" or iPhoto to download your photos from the iPhone. They both should come with an iMac by default.

how do you actually remove the photos from the iphone though? I can transfer them using my mac, but they stay on the iphone.
Unless you use a program that offers to erase the originals after importing from the camera, you'd have to manually delete them yourself from the camera roll section on the phone.
