Not 100% sure - but I want to say you'd have to manually manage your music & videos to do that...

You can still leave auto sync on if you play with the sync settings. Leave the "Manually manage music and videos" uncheck in the Summary tab. The Music tab should still have "Include music videos" still checked, set a selected playlist if space is still an issue. The Movie and TV Shows tabs could be set to sync none or selected videos.

Of course all your files should be properly tagged, but play with the different sync settings, you should be able to achieve what you want.

yes thats possible, even if you cant drag&drop movies to the ipod.
you leave auto-sync activated and on the movie-tab of your ipod in itunes you select "sync selected" and select the movies you want from the list below.

or, what I personally found easier, you choose "only sync checked music and videos" on the first page of the ipod (right above the manually manage music and videos thing) and then you go to the movies section in itunes and remove the blue checkmark next to the videos you dont want to sync - done.

But will that work after he deletes the movies from his PC? That's the question - if the movie disappears from his PC, it should disappear from his sync list even if he doesn't check/uncheck it, I would assume it disppears and is removed from his iPod Touch...

lol I should read every question to its last sentence.
that is indeed possible by tricking itunes. you can sync the movies with your ipod and afterwards, you browse to the directory where the movies are (not in itunes but in finder on mac or explorer on a windows PC) and delete them. itunes will now show that it cannot find the movie (an exlamation mark appears next to the movie) but the movie will not be deleted from your ipod since its still in the itunes database (even if it cant find the actual file). the moment you delete the entry from itunes it will get deleted from your ipod.

Correct. This is presently the only workaround to leaving automatic synchronization on but not keeping your files on the computer.

Note that you can also store your videos on an external hard drive or DVD and it works in much the same way... In fact, this is the reason why iTunes doesn't remove a video from the iPod just because it cannot find the file -- the file might be on external media that is only temporarily unavailable.
