I use Magic DVD ripper, it rips and converts DVD's in one go. I love it, it has worked like a dream with my PSP and Touch......very fast too.

Handbrake is the way to go. It is not only free, but has iPod and Apple TV presets.

You can't - it depends on the speed of your computer and memory available. Typically a movie rip takes approximately the time it would take the watch the movie on a modern (e.g., sold today) computer with Core 2 Duo, 2GB RAM, etc... Sometimes you can turn of H.264 encoding, but then you get either (1) a bigger movie or (2) more artifacts/compression...

Magic DVD ripper has a free trial period, I think uyou can rip 15 dvds before it asks you to register, but it is very cheap to buy and well worth it.

how much space should I expect a video to take up? Let's say a 2hour movie....

A 2 hour movie would be around 1GB.
IMO MeGui produces better quality iPod/iPhone videos than handbrake but it is a much more manual process.
