To tell you how to delete from the iPod, please tell us how you sync your iPod.
all songs and playlist or manually manage?

Simply uncheck the checkboxes next to the songs you don't want on your Touch. The songs will be removed from your Touch on the next sync but will remain in your iTunes library. When you want to put them back on your Touch, re-check the boxes.

So you are set to sync all songs and playlists then.
There are two ways to remove songs from an iPod under this method.
The first is to remove the songs from iTunes, on next sync, the songs will be removed from the iPod.
I like to keep such music in my iTunes library, so I simply uncheck any holiday music, and make sure I have the "sync checked songs only" option checked. on next sync, the holiday songs will be gone.
To get them in one go, make a smartplaylist to get all your holiday songs in one place in iTunes and hold down ctrl as you click one of the check boxes, it will uncheck all the songs in the playlist at once.
Sync, and your done.
