I just recieved a Monster "iTV" Cable for Christmas, and I cannot get my iPod Classic (160G) to recognize it when plugged into my TV. I AM using the s-video-to-RCA adapter and going directly into my TV. Please Help!

Hi and welcome to iLounge.
Unfortunately, the Monster iTV cable, like most of the older iPod video accessories, is not compatible with the 2007 model iPods.
About your only compatible option right now is the Apple Composite AV Cable (http://store.apple.com/1-800-MY-APPLE/WebObjects/AppleStore.woa/wo/StoreReentry.wo?productLearnMore=MB129LL/A), so hopefully you can exchange the Monster Cable for the Apple version.
