Ok. With my old iPod Nano, I would plug the USB into my computer and manually transfer some stuff (like pictures) by opening it from My Computer.
But how come I can't do that with the touch? Anyone know how? Thanks.

The iPod touch cannot be used as a disk (ie disk mode). You cannot manually transfer any files to the iPod touch. The reason is that the iPod touch uses a Mac OS X based operating system. It also uses the HFS+ file system which Windows is not compatible with unless you use iTunes to sync content.
No one knows if this feature will ever come to the iPod touch but I don't see it happening anytime soon unless Apple changes some things around.

Actually the HFS+ file system has nothing to do with it - the iPod Touch doesn't mount on Macintosh computers either. It has to do with the fact that Apple has not made this functionality available, most likely because they don't want your average Joe Blow user messing up the operating system which would be exposed.
