If WiFi is off and I try to access the net it doesn't succeed (obviously).

Suggestion - If I run Safari and WiFi is off there should be a pop-up option to turn it on.
(same as in Palm an others).

If this is already somehow possible I would love to hear how.

I totally second that.

I wonder if anyone would make a hack to have a button on the interface like blackberry's on and off for airplane mode.

Edited to add:

Search is your friend and i found that you gotta download the services.app from the installer. It turns on/off bluetooth, ssh, wifi, and edge... me likes. :)

i didn't know the ipod touch had bluetooth does that mean it can connect to mobile phones?

It doesn't have bluetooth. The services app was originally made for the iPhone and hence also shows the bluetooth option in the iPod Touch.
