Some of my videos on my iPod touch play fine, but then randomly stop at some points during the video and return me to the index of videos. I have only seen this happen so far with music videos, but I am not certain if it happens with movies and such as well. Is there any way to fix this? Could it be that the videos aren't quite right with the iPod touch because they work fine on my iPod (5th Generation). Help? Thanks.

Are you transferring your music videos all at once, or one at a time?
Something like this was happening to me. Deleting the music videos and manually recopying them one at a time helped solve this problem.
This was happening to my movies, too...so, I'd check them out if I were you. Since movies are so large, recopying them didn't help. The only way I was able to resolve the problem completely was to install a USB PCI card. For some reason, the iPod Touch didn't like the USB ports on my computer.

If your iPod Touch is set to manually manage music and videos, just plug in the iPod and open iTunes and delete the videos that don't work from the iPod Touch. Then just click on them in the iTunes library and drag them into the iPod Touch.

by delete them...you mean from where when I plug in my iPod? because if I delete the video from my library...there won't be any other place to get the video back from unless I buy it all over again from iTunes. And I do not have any other playlists, I just have my Library. That is it.

Just delete the file from your iPod...not your library.
You should have 2 copies of your videos. One on your computer, and one on your iPod. When you plug in your iPod, and it appears in iTunes (on the left side of the screen), expand the list by clicking on the arrow next to your iPod. It will then list various categories like music movies, etc. If you click on movies, you should find the videos in there. Just click on one and hit delete.
All you need to do then is find the file in your Library, click on it, and drag it into your iPod. I'm not sure how it will work if you are set up to automatically sync your library, but this is what to do if you manually manage your music and videos.
If you need any further explanation, I'll try to explain it greater detail.

I don't understand what you mean. When I plug my iPod in, there is no way to delete music videos separately on my iPod. The only way to delete anything is if I go to it in my library.

OK I'll do my best to explain it to you.
You will use iTunes to delete the files from your iPod. When you open iTunes, you will see your library. On the left side of the screen, you will see the source pane. Here you will see music, movies, etc. near the top. When you click on them, your library will display files associated with what you click on (ie, clicking on movies will show you a list of the movies in your library). If you have any playlists, they will also appear in the source pane on the left.
When you connect your iPod, the main library area will display info about your iPod. Here you will see a graph of your used/free storage space, buttons to update and restore, as well as options to sync automatically or manually. Just to be safe, place a check in the box next to manually manage music and videos. Don't worry, you can change it later if you want.
Now, looking at the source pane on the left, you should see your iPod listed. It will be listed as whatever name you gave your iPod when you first got it. It is also usually near the middle of the source pane. There will be an arrow to the left of the name. Click on the arrow to expand your iPod list. When you do this, you should see music, movies, etc. and a list of playlists. If you click on the movies listing that appears under your iPod name, iTunes will display the videos on your iPod. It is from this screen that you can delete movies from your iPod.
Let me get to my pc, and I'll post some pigs to help illustrate what I'm talking about (I'm posting this on my iPod Touch).

Alright I was able to navigate just fine thanks to your description, but it only let's me copy the file and such, not delete (that is when I right click the file).

That is odd. Are you set to manually manage music and videos? You should be able to just click on the file and hit delete.
I just made some screen grabs. I can post them if you like. Let me know.

I've never heard of that happening before. I deleted and recopied my movies more times than I care to count (before I realized the problem was my USB ports...on a Dell PC that's less than a year old, no less) and I never had any problem deleting anything.
You may want to try resetting your iPod by holding the hold and home buttons until the apple logo appears. If that doesn't do it, restart your computer. If you still have problems...well...I'm out of ideas:) You may need to call Apple or something.

After you encode your movies into apple format, try playing them on your computer to see if the entire movie is really there. I had a few that didn't encode all the way through, which I realized when I tried to play them on the computer.
I have Vista and found I had to put the movies (and photos) on a USB key in order to successfully transfer them to the touch. Movies were still a problem until I bought a super high-speed USB key. It seems that the slower USB key was fine for photos, but only transferred part of the movie. With the faster USB key, the entire movie transfers. maybe that will help others, too.

Everything works fine on my computer, as well as my iPod with video, but on my iPod touch some videos stop at some points and just go back to the index of videos. But I avoid it sometimes when I try to skip over the parts I know mess up. But it is a hassle, and I have to skip a good portion of the music videos. But I am noticing this problem on my iTunes, not my iPod. I cannot delete anything on my iPod from my iTunes.

Just because like 3 music videos have a minor glitch, you want me to get a new one? I think the problem can be solved. Maybe I could find a way to redownload the video and maybe it will be fixed. I don't know. It is worth a try maybe if I can figure out how.
