I plan to jailbreak my Touch, but I first want to make a complete restore of it. Is there any way I can do this, meaning I can just make a clone of it, so I'll have all of my playlists, music, videos, etc ready to just transfer back once I finish jailbreaking it?

You can't unless perhaps after you jailbreak it, copy all the files in your touch to your computer. That is the best you can do. Or copy all your videos and music back to your itunes library.
