There are several guides around iLounge to help you do this.
This is the best one.

The most important thing is that when you plug in your iPod, you make sure to choose to turn auto-syncing OFF until you have finished copying your music over to your computer.

I'm not sure if any of those methods will work with the touch since the touch has no disc mode...

Ah, my mistake. I read the title and didn't even bother with the forum we were in. It's a bit too early for me.

As far as I know, there is no way to access the files on the iPhone/iPod Touch without using some third-party software or being super-tech savvy.

Did you try iPhoneDrive (http://www.ecamm.com/mac/iphonedrive/)?

A better question is:

When I download an album off of iTunes on my Touch...why doesn't it show up in iTunes on my Touch? It also doesn't show up on my "purchased" tab in iTunes. Any idea if that is how it is supposed to work?

Go to file and click "Sync Purchases from iPod"
