I wonder if there is any way to save pages in Safari so that you can read them offline when not connected via WiFi? Quite often I will run across material on the web that I want to store for later reading. Plus I'd love to have a way to capture large text files (like ebooks) and read when not connected. Surely Safari has a way to do this or some third party software will appear that allows this. To me this will negate the problems with not always having an internet connection.

That feature does not presently exist on the iPhone right now, and it's therefore unlikely that it would be available on the iPod touch.
The best you can do right now is simply leave the page open, possibly in another window (the Safari browser supports multiple windows), and hope it doesn't need to refresh.
Of course, since the iPod touch will likely be running a newer firmware, it's entirely possible that this feature may be added, but I wouldn't hold my breath, as it's unlikely a priority.

Well bummer. Surely some enterprising person will develop a 3rd party app. to do this.

We'll see how easy/hard it is later to install iPhone apps on the Touch, shouldn't take too much work.
Not too much format support, but it seems like a great start.
