So I know the iPhone comes in a 4gb and an 8gb version, but my question is, how much space does the pre-installed software take up, and does it count towards that 4gb/8gb limit?

from what I understand the 4gb model has approx. 3.9gb dedicated to the OS and the 8gb has 7.9 dedicated to the OS.

In iTunes, my 8 GB iPhone shows 7.24 GB total.

Some reports have said 700MB, but this is not accurate, since the iPhone is subject to the same 1,024<->1,000 conversion issues as any previous model of iPod (and for that matter, any hard drive or flash-memory based device).
In short, hard drive manufacturers consider 1GB = 1,000,000,000 bytes, while software measures 1GB as 1,073,741,824 (1,024^3). A move has been afoot for some time to more correctly label the computer software measurement as a Gibibyte, or GiB for short, to differentiate the two units. Sadly, this has not caught on.
So, like the 8GB iPod Nano, you only get 7.45 GiB of usable space to begin with (7.45 * 1024^3 ~= 8,000,000,000). The difference between this 7.45GiB and the 7.27GiB that shows up is the operating system and other internal files -- around 200MB.
The same differences are apparent on the 4GB model as well.... 4GB = 3.72GiB, with 3.46GiB of usable capacity. I'm not sure why the firmware appears to take up a bit more space on the 4GB model.
