To update tracks on your iPod from more than one computer, you have to set the iPod to manually manage your content, and then drag-and-drop the tracks from iTunes to your iPod.
The manual setting can be found in iTunes 7 by connecting the iPod and then selecting it in the source list on the left. Look for the checkbox that says "Manually manage my music and videos" and simply check it off and click "Apply."
When you first connect your iPod, if it's synced to another iTunes library, you will get a warning to this effect. Simply select "Cancel" (instead of "Erase and Sync") and you'll be able to access the settings in iTunes to set the iPod into manual mode.
Note as well that the manual mode setting travels with the iPod, so it will remain set for the iPod on any computer you connect it to, unless you turn it off yourself.
