Do the earphones supplied with the video iPod wear off in a year and a half of constant use?
If so, does the volume reduce gradually or does it just go dead??

The life of the earphones depends on the user, though it is expected to fall out in 2-3 years. If not maintained properly, it could get busted in a year.
If it does die out, then you could get funny noises through the ear phone, or only one ear phone might function, or as you said, the volume might slowly deteriorate before it goes dead.
