Does it void your warranty? Almost certainly, yes, technically speaking.
Large companies will ten to use any excuse they can to wriggle out of honouring the warranty on their product.

That said, in well over a year of following RockBox's development for my iRiver H340, I never once heard about someone having their player sent back because of it.
It all depends on luck and circumstances really - if your player won't turn on at all and is completely bricked, then how are they to know it's got RockBox on it? Then again, if they turn on the player and the first thing they see is 3rd party firmware, you're pretty much screwed ('scuse my French).

The answer is, if you need to send your iPod back to Apple, remove all traces of RockBox before you do so.
Then you're fine.

It is likely it does void your warranty. You are taking iPod firmware files off, changing them, and putting them back on. That is the bootloader. You are then adding some more files, the Rockbox OS.

If you can do a restore, then RB and all traces will be removed.
