How do you make a list of tracks an audio book?

What do you mean?
I personally just import my books CD at Once and name my audiobooks by CD number. I suppose you could add the chapter info to the comments.
You could also import each track separately, and set the title to "chapter 2 - such and such happens 01" and increment the last number for each track of the chapter.
So basically, you can import any CD as an audiobook?

I think by 'default' they get imported/ripped as separate Mp3 files, one per chapter or one per CD. That doesn't give you the full functionality of 'audiobooks', however. I think you can set them up to be bookmarkable like an actual Audible-type audiobook; search here for 'bookmarkable', or check a couple stickies in the Audiobooks forum.

dtcarson is basically right. They typically get imported in the format you usually import as, and by default would have the same number of files as tracks on the CD. Some audio book, this is 99 tracks per CD.
A more convienient way to manage them is to import the CD as one file using the Join Tracks option in the Advanced menu. Then there is a more managable number of files per book. Use the Podcast quality import option to get smaller files.
Don't bother trying to merge the CD files into a single book file, they don't play well on iPods if they are greater than 5 hour or so long.
Set each file to Remember Playback position, and Skip on Shuffle.
Don't bother to modify the files to be actual audiobooks (change the extention from .m4a to .m4b will do it) because it is easier to manage them with smart playlists (Name = title, playcount = 0).
