I have installed ipod linux on my photo ipod. I have used it to watch movies. This tells me that the only different thing about the video ipod is its software, because since mine plays videos, it's obviously not a hardware difference. Does this mean that if i somehow put ipod video software on my photo ipod, I could do everything it could?

no, there is a video decoder chip in the iPod video that allows playback of videos. so there is a hardware difference between iPod video and iPod photos.
