But why does everyone recommend the EX-71's as if they're the greatest thing in life?

Three reasons...
1. Custom ear pieces
2. Long wire...
3. Case for headphones

The bass is impressive.
You don't immediately notice how bad and muddy the mids are.
You don't immediately notice how poor and hissy the highs are.
They are also very comfortable, and very easy to find.
And unlike the Apple In Ears, they fit, and stay in your ear.

Well, I have both the apple in-ears and the ex51 (actually my brother's)
The sony ones broke within a week. Ive had my apple ones for about a year now.

That they fit was the biggest reason I bought EXs instead of in-ears...

This is too true....especially points 2 and 3!

The in-ear sounds incredible (never heard the Sonys), but agreed they tend to fall off pretty easily...

I'm only assuming, but I take it you don't like the EX71s very much, correct?
And I can't say I agree with point 2, but point 3 is definitely so.
The highs are quite hissy, but the overall quality is not too bad.
I am looking into some Apple in-Ears, seeing as I have earbuds shipping that fit both my EX71s and will fit the Apple in-Ears.
Thanks for the reccomendations, by the way.

In-ears sound better with the EX71.......EX71 ear pieces. The in-ear stock ear-pieces do not provide the proper fit and thus not the proper seal. People pass poor judgements on these because they are not getting a proper seal.....

I definitely agree with fernando. I couldn't stand the sound of the EX71s or 81s. The highs were piercing and painful, the mids were muddy and the bass was muddy and overbearing.
The Apple In-Ears were great! People just need to use the right size. I needed large with the Sonys but only medium with Apples. Much better sound and they weren't painful to listen to at all.
But I'm not an earbud fan at all. So I use Koss KSC-75s (better sound than Sony and Apple!) and Audio-Technica ATH-FC7s for my portable needs.

I think there fantastic phones, Just got me a second pair after tying quite a few others.. Panasonics, Philips and CX300's...
But the Sonys do it for me.
The latest ones seem even better than me old ones with a tighter and more open bass.
I luv em

I can just believe that a real basshead might prefer the EX71 to the CX300. But how anyone could prefer the muddy bass and sibilant hissy highs of the EX71 to the Panasonic HJE70 (which is still bassy, just with some clarity) beats me. I don't believe you've tried the 70, yrellag.
