Hi and welcome to iLounge!

Normally you remove songs from the iPod by removing them from your iTunes library. The iPod will sync to whatever is in your iTunes library and basically keep both your PC and your iPod "mirrored."

If you want to leave the songs in your main computer's iTunes library but take them off your iPod, there are a couple of ways you can do this:

UNcheck the songs in iTunes, and then go into Edit->Preferences->iPod and check the setting to "Update Checked Songs Only." This will remove any songs that are UNchecked in iTunes.
Create a playlist, or series of playlists containing ONLY those songs that you want on your iPod. Go into Edit->Preferences->iPod and select "Automatically Update Selected Songs and Playlists Only" and select those playlists that you've created. The iPod will only sync tracks that are in those playlists.
Set your iPod to manual mode by going into Edit->Preferences->iPod and selecting "Manually Manage My Songs and Playlists." You can then access the iPod directly and remove anything you don't want directly from the iPod (just select it in the left-hand source pane). You will also need to add any new tracks from your library manually by dragging-and-dropping them onto the iPod. Note as well that in this mode ratings and playcounts will not be transferred back to your iTunes library from your iPod.
