A simple addition would be the ability to view all the ID3 tags of the current track while it's playing. Just another "page" that the select button would cycle through.

Agreed. I put extra info in the "Comments" tag of some songs and there's no way to view that on the iPod which can be frustrating sometimes.
Slightly more complex but equally desirable would be the capability to choose which tags are displayed (in additon to the basic artist/song name/album ones), similar to the new functionality we've been given to customize the Main Menu on 3rd gen. 'Pods.
