Why does it say "Charging" for about an hour on my iPod after using it for only 5 minutes? Wouldn't it only take a couple minutes to charge it after a few minutes of use? I've only had this for about 2 months (3rd generation 3G) Is this normal?

It's pretty normal for any kind of battery that you can re-charge repeatedly. That last bit of charge takes the longest.

A good example is that in the User Guide it says that it will be 80% charged in about an hour, but fully charged in 4. It takes 3 hours more just to get that last 20%.

Lance below has a good point too. The whole battery display on the iPod is very inaccurate.

I believe that the charging display is only a timer and not an actual accurate display of if it's charging or not. That's why if you unplug the ipod after charging all night, then plug it back in, the charging will do the same for another hour. It's frustrating but if you just use your battery meter when not charging to gauge how much life you have left you should be fine.
