Urgent Assistance Needed With Mac/Windows iPod (Compatability)

A friend of mine - a restarauntuer - asked I digitize his CDs for him after he purchased 2 iPods. I obliged and I've spent 3-days digitizing almost 500 CDs. Now... I've been a Mac person since '83, so my knowledge for PCs is limited. I had expected that I could digitize the CDs, at home on my G4, upload them to the iPod and he would have have plug-n-play capabilties at his restaraunt. Well... No such luck.
I installed iTunes and MusicMatch on Dell laptop. Once the iPod was plugged in and the iPod updater did it's thing, it erased one of the iPods. No big deal, since I have a back-up here on my system.
So my question is: What is the best way to set-up his iPods? All of his music is on my Mac drive. He owns a Dell and I imagine he'll want to adjust playlists, move files, etc. An obvious answer might be to bring my firewire drive to his computer and work from there? Or, is there a workaround via 3rd party aps that might make the job easier? Can the iPod go back and forth between both machines or am I screwed b/c of the piracy protection and the serialization process?
Any advice would be VERY appreciated.
