If the Macs are running OSX 10.3 or 10.4, you should be able to dump the video with iMovie. You can simply import the whole tape, save it as a .mov or .dv file, burn it to a CD/DVD or copy it to your iPod and move it to your PC.
iMovie is extremely easy to use, so you shouldn't have any problem with it.
