If space isn't a major issue, I'd go with MP3, and LAME on alt-preset-standard (or higher... alt-preset-extreme is what I used before I had to reinstall), but I'm not sure if that's doable on Macs. AAC is a good format, but with MP3, you are pretty much assured every gizmo out there as well as your iPod will be able to play it.
