Next check your iPods sync settings, with it selected in iTunes check the settings in the Movies and TV Shows tabs. TV Shows are set to only sync unwatched episodes by default, either reset the playcount or set the sync setting to sync all episodes.

Select the iPod in iTunes then select the TV Show tab on the right to set the TV Shows sync settings.
