Continually Forced to Restore

ok, i have a new problem. i have downgraded and then updated and then jailbroken my 1.1.3. ipod touch about 6 times total now, because every time after getting all of the 3rd party apps that i want on it, when i reboot it, i am continually forced to restore it. i get the plug into itunes icon and i have to start all over and restore to 1.1.1., jailbreak, then 1.1.2. then jailbreak, then 1.1.3., then install 3rd party apps. i need to know if there is a way to avoid this from happening and to know if, when i get this plug into itunes screen, there is a way around it? i have been following ipodtouchmaster's 1.1.2. jailbreak, then downloading the 1.1.3. apps/jailbreak from the devteam on installer. each time i've done this, i can get to a point where everything is working just fine, then all of a sudden it reverts to the plug into itunes screen. the last one was a few minutes ago, and the one before that was yesterday. before that, it had been weeks since i went through this. i'm beginning to learn the downgrade/jailbreaking process by heart, but i'm wondering if i'm missing something or if i should be doing something differently? any suggestions would be great. i'm getting tired of going through this process every couple of weeks.
