I wasn't refering to the "get artwork" feature in iTunes. All my songs have their proper cover art from Amazon/Google too, and "embedded" (if i can use this term) to the file via iTunes. BUT, they're not actually embedded within the tag, instead, all cover art pictures are stored in a special"artwork" folder in iTunes and in your iPod, and not within the mp3 file.

So, I insist, the iPod DOESN'T read cover art pictures embedded via a tagger software, only via iTunes; how you can do this?, well, you can use the "get artwork" feaure or do it manually as you said.
