Actually, I have yet to see a single confirmed report of someone bricking their iPod Touch.
Couple notes - jailbreakme.com only jailbreaks the 1.1.1 firmware iPod Touch. If you have the 1.1.2 or want to upgrade to the 1.1.2 firmware, please see the other thread in this forum with details on how to jailbreak. It actually is surprisingly easy and takes less than 30 minutes or so...
As for the next iPod update - just do what everyone did this time - wait. Wait for a few days until the Touch Dev Team have cracked the latest firmware. Or decide to forgo the jailbreak applications. You are not forced to update the firmware.
