With your iPod connected to the computer, fire up iTunes and select the iPod icon in the iTunes "Source" column; this brings up the iPod pages in the main part of the window. The Summary tab has a setting for "Open iTunes when this iPod is connected" -- is that checked? if not, check it and then click the Apply button.
